Grilled Chicken Pizza - low carbs but great taste

Here's a fun idea I came up with for the ABC station here in town.  It's making a pizza while using chicken for the crust.


Take one breast of chicken per person, place them between sheets of plastic wrap and flatten to 1/4 inch with a meat hammer or a rubber mallet.
Sprinkle with salt and pepper and place on grill for 1 minute or until meat starts to turn white.
Flip meat over and add a think layer of pasta sauce, some mozzarela cheese and your favorite pizza toppings. Close the lid to the grill and let it cook for 3-4 minutes or until the cheese is completely melted.
Serve hot!

5 minute Chinese Beef and singing with Eric Hutchinson and Matt Nathanson

Here's a fun fast recipe that I actually put into song for our guests Eric Hutchinson (Watching You Watch Him) and Matt Nathanson. I love it how they joined in at the end. What good sports.




Rob's 5 Minute Chinese beef.

1 pound sirloin steak cut in small pieces, about 1/2 inch cubes.

Add a little sesame oil to a frying pan on high heat. Once pan is hot, add beef and fry until outside is brown flipping often. 

Lower heat and add:

2 spoonfuls hoisin sauce
2 spoonfuls soy sauce
1 spoonful sugar
2 spoonfuls rice vinegar
1 spoonful peanut butter

Stir until combined. Serve over rice. 

Optional, add 2 handfuls pea pods with ingredients for sauce. Stir until hot.
