Super Bowl Ideas 2012

The Super Bowl is the second biggest eating day of the year in America (the first is Thanksgiving). So if you're looking for some quick ideas to feed your crew, here are two - Little Shrimp Cups and Pork Stuffed Corn Muffins.




Little Shrimp Cups

What you'll need:
1 bag of Tostitos Scoops
sour cream
1/2 lb little shrimp peeled
Seasoned salt like Lawry's or Thai Seasoning
Shredded cheese
Butter

Lightly fry the shrimp over medium heat lightly sprinkling with your seasoned salt.
Put a couple scoops of sour cream in a plastic sandwich bag. Cut a small corner off the bag to make a makeshift pastry bag. Squeeze a little sour cream in to the bottom of each Scoop.


 
 Then add a few of the little shrimp.

Sprinkle with a little shredded cheese and then place under the broiler until the cheese just melts.

 Serve and root against the Patriots.


 Pork Stuffed Corn Muffins



This idea I got from my friend Chef John at Foodwishes.com

What you'll need:
Barbecued Pork from your favorite BBQ joint.
Jiffy Corn muffin mix















Mix the Jiffy corn muffin mis according the box directions.
In a greased muffin pan pour 1/2 inch of Jiffy corn muffin mix into each cup.
Then add a generous scoop of BBQ Pork
Cover the rest of the way with the Jiffy Corn Muffin mix.
Bake at 350 for 20 minutes.
Serve and root against the Patriots.

  1. Everythings Sounds Great! And as always I will try these recipes. But being from New England I cannot bring myself to root for anyone other than the Patriots.
    Rob you have great taste in food... your recipes have made me a hero at home...
    but your taste in Football teams needs a little work...
