Crispy Breakfast Egg Rolls |
Try these for a fast and fun breakfast.
In a small bowl mix 1 tablespoon flour with 2 tablespoons cold water. Stir until combined.
Add 2 eggs, 1 spoonful sugar, a pinch of salt, and couple drops of soy sauce. Stir until it's combined.
Over medium heat lightly butter a nonstick pan and pour out a small amount of the egg mixture. Twirl the egg around until it is one layer. Cook for 30 seconds.
Once the edges of the egg star to pull away from the pan, gently slide your spatula under and flip it over.
Cook for another 30 seconds.
Flip over and cook for 15 seconds moving around any air bubbles that may appear. (They are a good thing.)
Flip over again, sprinkle with a little shredded cheese and bacon bits, making sure to get some of the cheese on the pan so it crisps up.
Remove, place on plate and roll up, starting at one end and wrapping tightly.
(For a real treat, spread with crab dip instead of cheese and bacon, we like the Blue Crab dip from Costco)
